So today I made the most BADASS lunch for myself. I’m always trying to lose weight (like 99% of the population) and have been running out of ideas for what to make. Plus, I work at my internship three times a week and need a good lunch that travels well. I’m pescaterian, which limits my options even more. So I did a little research and stumbled across some inspiration. I went to the store, got all the necessary ingredients and made my glorious creation.
I call it Just Beet It.
- 1/3 cup quinoa (can be prepared with either water or veggie stalk)
- 1/3 cup lentils (premade at Trader Joe’s – huuuuuge time saver)
- 1/4 cup cherry tomatoes, sliced
- 1 green onion stalk, chopped
- 1 boiled red beet, sliced
- 2 tbsp herbed goat cheese (this is crucial)
Mix it all together, add a little salt and pepper and refrigerate for a few hours to ensure it’s chilled. Delicious and healthy!
I even made one for my carnivorous bf who claimed “these beets is dope…“
